Strawberry Pie

Ingredients

  • 1 frozen deep-dish pie crust
  • 2 pints fresh strawberries (divided)
  • 3/4 cup sugar
  • 3 T cornstarch
  • 1 t vanilla
  • 1 cup water (divided)
  • Directions

    1. Pre-cook deep-dish pie crust as per directions and allow to cool.
    2. Dice 1 and 1/2 cups strawberries.
    3. Cut the rest of the strawberries in half and place in the pie crust.
    4. In a medium sauce pan, add diced strawberries, sugar, vanilla and 1/2 water.
    5. Heat on medium until starts to come to a boil.
    6. Using an immersion blender, blend sauce until smooth.
    7. Cook on a low boil for 5 minutes.
    8. In a small bowl, whisk together cornstarch and 1/2 cup cold water.
    9. Add the cornstarch to the sauce and bring to a boil for 1-2 minutes.
    10. Remove from heat and pour over strawberries in the pie crust, filling gaps as necessary.
    11. Refrigerate for an hour before serving.
