Strawberry Pie
Ingredients
1 frozen deep-dish pie crust
2 pints fresh strawberries (divided)
3/4 cup sugar
3 T cornstarch
1 t vanilla
1 cup water (divided)
Directions

Pre-cook deep-dish pie crust as per directions and allow to cool.

Dice 1 and 1/2 cups strawberries.

Cut the rest of the strawberries in half and place in the pie crust.

In a medium sauce pan, add diced strawberries, sugar, vanilla and 1/2 water.

Heat on medium until starts to come to a boil.

Using an immersion blender, blend sauce until smooth.

Cook on a low boil for 5 minutes.

In a small bowl, whisk together cornstarch and 1/2 cup cold water.

Add the cornstarch to the sauce and bring to a boil for 1-2 minutes.

Remove from heat and pour over strawberries in the pie crust, filling gaps as necessary.

Refrigerate for an hour before serving.
